Christmas At My House

Many people have requested to see how I decorate for Christmas. Believe it or not, I am pretty simple when it comes to decorating. I have two cats which can be like having two kids, so I am careful with decorations. Here is a little peek into my house and how I decorate for Christmas!

It's Beginning to Smell A Lot Like the Holidays!

Tis the most wonderful time of the year... the Holidays!! I am not sure which part is my favorite, the baking, food, the music, or the scents. When the holiday time arrives, I immediately start making my favorite stove-top  holiday scent. I am going to share how to make your home smell like the holidays!

For the fruit, I use the apples and oranges that are close to being thrown away. They still have a lot of scent to them and work perfect for this recipe.

Usually I make a single batch and it will last me at least a week! I only need to add water about every other day. So gather up some old apples, oranges and cinnamon and get ready to be put in the holiday mood!

Kym's Holiday Stove-Top Scent

Ingredients:

Apples, roughly sliced
Oranges, sliced and peeled
Peelings from oranges
Whole cloves
Cinnamon (can be ground or sticks)
Nutmeg
All-Spice
Water


Directions:

1. Slice your fruit and throw them into a big pot.
2. Add water to the pot about 1/2 full.
3. Next add in all of your spices and orange peelings.
4. Turn heat to high until it starts to boil. Then turn heat down to simmer and Enjoy!

Homemade Fall Snickerdoodle Cookies

During the holiday season, I like to experiment with new recipes and flavors. I was watching one of my Food Network shows the other night and they were making snickerdoodle cookies. I am a huge fan of snickerdoodles! Believe it or not I have yet to make my own, so I figured I would give it a try and add my own spin to it. 

I started with my base recipe, which is actually the recipe for the Boyfriend cookie just without the candies. In order to get that "fall flavor," I added a pinch of all-spice and nutmeg to my dry ingredients. I also added a little of those spices to the sugar mixture that I rolled the dough in before baking the cookies. 

These are some delicious little cookies! They would be perfect on some ice cream or with some coffee. I could picture them wrapped in cute bag and given as a gift during the holiday season!

Fall Snickerdoodle Cookies

Ingredients:

1/4 cup white sugar
3/4 cup brown sugar
1 cup butter, softened
1 pkg instant vanilla pudding
1 tsp vanilla
2 eggs
1 tsp baking soda
2 1/4 cups flour
1 tsp nutmeg
1 tsp all-spice

Sugar Topping:
Sugar
Cinnamon sugar
Nutmeg
All-spice


Directions:

1. Preheat oven to 350 degrees for dark/ non-stick pans, 375 degrees for regular baking pan. 

2. In a large mixing bowl, cream the butter and sugars 

3. Add the pudding mix, eggs, and vanilla into the mix and stir well 

4. Next add the flour, spices and baking soda to the mixture, and continue to mix well  

5. Make small balls of dough and roll them in the "sugar topping" mixture.

6. Place them on the baking sheet about 1/2 inch apart. The cookies do not spread out much so the 1/2 inch should be enough. 

7. Bake for about 10 minutes or until golden brown 

8. Remove and cool before packaging





A Holiday Favorite: Kym's Holiday Almonds

Well it's my favorite time of the year again... Holiday time! Usually around Thanksgiving, I get many requests to make my cinnamon almonds. They are warm, sweet and addicting! I thought I would share my recipe so that you can make your own tasty delight! 

I have used this recipe and changed it many times. I add a little nutmeg sometimes and other times I add more vanilla. It is yours to change and make amazing! I make them and let them sit overnight, just so they can completely cool and harden. They can be used as a small gift or even taken to a holiday party! 

If you add anything new let me know, so that I can try it out!!

Kym's Holiday Almonds

Ingredients:

3 cups almonds, whole, raw
1 cup sugar
2 tbs Cinnamon Sugar
1/4 cup water
Vanilla (to taste)
Parchment paper
Spices (All to Taste):
Ground Cinnamon
Ground Nutmeg 
Ground All-spice  



Directions:

1. In a saucepan, heat the sugars, spices, water and vanilla. Let it boil for 1 minute while stirring continuously. 

2. Remove from the heat and add the almonds. Mix the almonds until they are completely coated.

3. Pour almonds out onto a piece of parchment paper.  Spread them around the paper to make a single layer.

4. Let them cool completely overnight. Try not to eat too many! 

5. Break them apart and share! The almonds may be stored in an air tight container for a few days.

Yummy Pecan Toffee

It is officially Fall, whether it feels like it or not! I know here is Florida we are still experiencing the wonderful heat, but it is slowly starting to cool down! One of the favorite recipes to make during the holiday season is a really yummy pecan toffee. It is the perfect little recipe to share with everyone! You can break it up into pieces and put them in the cute little take-out boxes to give as gifts! Now that is if you don't eat it all! I posted this to my other blog (Welcome to Kym's Kitchen) a while back and thought that I would go ahead and share it with you again!

Add anything you want, like almond instead of pecans. I added some Heath bar bits to it. If you try something new, let me know because I would love to try it too! Oh and there is not a picture for this recipe because the toffee didn't last long enough to take one! We all ate it up quick!

Pecan Toffee 
 

Ingredients:
1 1/2 cups chopped pecans, divided
1 cup sugar
1 cup butter, softened 
1/3 cup water
(1.55-ounce) milk chocolate bars, broken into small pieces *Or 1-2 Bags of Milk Chocolate Chips*

Directions:
1. Line a 15- x 10-inch jellyroll pan with heavy-duty aluminum foil; lightly grease foil. Sprinkle with 1 cup pecans to within 1 inch of edges.
2. Bring sugar, butter, and 1/3 cup water to a boil in a heavy saucepan over medium heat, stirring constantly. Cook over medium-high heat, stirring constantly, 12 minutes or until a candy thermometer registers 310° (hard crack stage). Pour over pecans; sprinkle with chocolate pieces. Let stand 30 seconds.
3. Sprinkle with remaining 1/2 cup pecans. Chill 30 minutes. Break up toffee using a mallet or rolling pin. Store in an airtight container.

Shirts Made Into Wall Art

Do you have old t-shirts that you don't want to get rid of but don't know what to do with them? Maybe you are holding on to them because it is a memory of something. Or it's one that you got from a concert, vacation spot or special event.  Well I came up with an idea to turn those old t-shirts into wall art. 

I looked in my closet and saw my stack of shirts that I didn't want to get rid of because they had meaning to them. Some of them were from places I have been on cruises, restaurants I had visited that were no longer open and some that I could not wear anymore, like my very first ORU shirt.  I decided to take a "sewing circle" and use it as a frame for my old shirts. 

I took one of my shirts and put it in the circle just like you would for cross-stitch or needle point. After I made the fabric tight within the circle, I cut around the edge so that the extra material was gone. I saved all my extra shirt material and use them for cleaning! After I cut the extra material off, I hung my final product on the wall just like you would a picture. 

This is such a fun and easy way to take old shirts and make them into something new. I'm sure you could use the same method with an old blanket or something like that.  Try it out!

Pumpkin Pie Cookies- A little "bite" of Fall

I understand that it is only the end of August, but September begins this week! I am already in the fall mood with pumpkins everywhere, my black cat figurines, and fall scents all over the house. So I thought it would be nice to kick off the fall season with a post from my other blog: "Welcome to Kym's Kitchen" I posted this last year after I experimented with pumpkin. Enjoy! 

Fall is quickly approaching (even if doesn't feel like it for all my fellow FL people), which means everything pumpkin will be out. Starbucks' Pumpkin Spice lattes, pumpkin breads and just simply pumpkins! I thought it would be appropriate to experiment and try to make a pumpkin pie cookie.  I have successfully made a pumpkin pie cookie that is to die for. I am usually not a pumpkin person... I will eat a slice of pumpkin pie, but it has to have more whipped cream than pie on it. These cookies though... I could eat a dozen of them! These would be perfect for a Halloween party or even Thanksgiving. They could be topped with a little whipped cream, my pumpkin spice icing, or a pumpkin spice whipped cream (I will give both recipes below).

They do end up being like a cake consistency. I have not experimented with trying to bake them as a "cake", but it might work. So if you are feeling adventurous, try it! It is hard to tell when the cookies are completely done, so you can either use the toothpick method or check the bottoms to see if they easily come off the cookie sheet.

Pumpkin Pie Cookies
Ingredients: 

1 cup butter, softened
1/4 cup white sugar
3/4 cup brown sugar
3 1/2 oz vanilla pudding, instant (usually it is 1 pack)
2 eggs
1 tsp vanilla extract
2 1/4 cups flour
1 tsp baking soda
1/2 can of pumpkin (You can add the whole can if you think it needs more)
1-2 tsp pumpkin pie spice

Directions:

1. Preheat oven to 375 degrees.
2. In a large mixing bowl, mix together the butter and sugars
3. Add the pudding mix, eggs, and vanilla into the mix and stir well
4. Next add the flour and baking soda to the mixture, and continue to mix well
5. Add the pumpkin pie spice and mix well.
6. Lastly add the pumpkin and let it mix in well.
7. Bake for about 10 minutes. The cookies will be almost a cake consistency, so just check inside to the cookie with a  toothpick to make sure that they are done.  


Optional Toppings:

Pumpkin Spice Buttercream Frosting

Ingredients:

1 cup butter, softened
3 1/2 cups confectioners sugar
1 tsp milk
1 tsp vanilla extract
1/8 tsp salt
Pumpkin Pie Spice 

Directions:

1. In a bowl/ mixer, combine butter, sugar and salt. Beat until blended.

2. Add the milk and vanilla and beat for an additional 3-5 minutes or until smooth.

3. Add the Pumpkin pie spice to taste. 

Pumpkin Spice Whipped Cream
(Kym's Kitchen)

Ingredients:

1 16oz. container heavy whipping cream
1- 2 cups sugar (depending on how sweet you like it. If you would prefer a non- sweet whipped cream, you can just leave it out)
1-2 tsp pumpkin spice

Directions:

1. Beat the heavy whipping cream until it peaks and is light and fluffy.
2. Gently add in the pumpkin spice and sugar.

** All of the sugar and pumpkin spice can be added in "to taste". This is why there is not a definite amount listed. I just added a little here and a little there. **

Slow Cooker Chocolate Cake

I apologize that I have not posted in months!! Between work, some health issues and life in general I have not taken the time to blog much. I decided to make some goals for the rest of the year and keeping up with my blog is one of them!! So here we go!!

As many people know I am not a big chocolate fan, but when I found a recipe for a slow cooker chocolate cake, I had to try it! Let me tell you, it is delicious!! I ate mine with a scoop of ice cream and it was so good! I thought I would share the recipe with everyone especially all the females out there!!

Slow-Cooker Chocolate Cake

Ingredients:

2 cups sugar
1 3/4 cups flour
34 cup cocoa powder
1 1/2 tsp baking powder
1 1//2 tsp baking soda
1 tsp salt
1 cup milk
1/2 cup vegetable oil
2 eggs
1 tsp vanilla extract
1 tsp almond extract
1 cup boiling water

Directions:

1. Spray crock of a large slow cooker with cooking spray.

2. In a medium bowl, whisk the sugar, flour, cocoa, baking soda, baking powder and salt. In a separate small bowl, whisk together the eggs, milk, oil, vanilla and almond until well combined.
Whisk in the boiling water**. Pour the wet ingredients into the dry and mix well.

3. Pour the cake batter into the prepared slow cooker.

4. Set slow cooker to "Low". Cook until cake has no wet spots on top and has pulled away from the sides of the crock, about 3 hours. Turn off slow cooker and allow cake to rest for 30 minutes before serving.

** I used my stand mixer for all of it. I felt like with the mixer it reduced my risk of making "scrambled eggs" with the boiling water. **

The In-Famous Boyfriend Cookie

"When life gives you lemons, make lemonade." Isn't that how it goes? Well if that is the case then I have been making gallons! Life has been so busy with work and doing little things around my house that I have not taken the time to sit down and write a post, until today. I decided to take one of my favorite recipes from my food blog and share it on this one.  Hope you enjoy: 

I know that the title "Boyfriend Cookies" sounds funny but seriously these are the best cookies ever! There is a little bit of everything in these! Peanut butter, chocolate, sugar, Reese's...  Everything but the kitchen sink. These are suppose to help you get a boyfriend or at least make your boyfriend happy with these cookies, hints the name. Unfortunately, I haven't gotten the boyfriend but I have had raved reviews of these cookies! So many people have requested that I make them over and over again. Here is a little warning: THEY ARE ADDICTING! You can't eat just one!
This recipe like most of them, are very simple. The only thing that I would say is tricky, is since there are so many goodies that get added to the mix, the batter is very thick! After I add everything, my mixer sounds like it is going to die. With that said, I would suggest adding the goodies by hand. Don't worry, you will get a nice arm workout!

Boyfriend Cookies
Ingredients:
1 cup butter, softened
1/4 cup white sugar
3/4 cup brown sugar
3 1/2 oz vanilla pudding (usually it is 1 pack)
2 eggs
1 tsp vanilla extract
2 1/4 cups flour
1 tsp baking soda
1 cup milk chocolate chips
1 cup semi-sweet chips
1/2 cup white chocolate chips
1/2 cup peanut butter chips
1/2 cup M&M's, any kind is fine
1/2 cup Reese's pieces
1/2 cup butterscotch chips

Directions:
1. Preheat oven to 375 degrees.   
2. In a large mixing bowl, mix together the butter and sugars 
3. Add the pudding mix, eggs, and vanilla into the mix and stir well 
4. Next add the flour and baking soda to the mixture, and continue to mix well  
5. Finally, mix in the chocolate chips and the rest of the candy
6. With a regular spoon or a scooper, drop a spoonful of the dough onto regular ungreased baking sheets
7. Bake for about 10 minutes or until golden brown 
8. Remove and cool before packaging

DIY Painted Mirror Sign

Finally the post that many have been waiting on. Here is the how-to for the cute mirror sign that I made for my foyer. I found a similar idea on Pinterest using an old painting, but I thought a mirror might add a nice touch. When I moved out of my condo, I had a set of old mirrors that I had used on my living room wall. Although there are many places I could use them in my house now, I decided to use them in a different way by making signs out of them! For the directions, I decided to make a new one for my sunroom, which will be island/ Jimmy Buffett themed! 


As far as the type of paint I used. I have a whole bunch of samples left over from when I was painting my rooms. Most of my samples were from Lowe's and I used the Valspar.  I have found that these work great because they are a little thicker than regular craft paint. The color options are also endless and they were only $2 for the sample! It is hard to find decent paint for that price at the craft store some times! You can really use your imagination when making these. You can do a child's name, a Bible verse (or just reference), a quote (if you are feeling ambitious), and simply an initial. Have fun and use your creativity! I would love to see what you have come up with, so please share!!

What you will need:

A Mirror (whatever size you want)
Letter Stickers
Paint of any kind
Q-Tips ( you will see why in a few)
Small Paint Brush
Clear coat spray paint


Here's How to Make It:

1. Lay out your stickers where you will want them. You can move then around until you find the perfect spot.


2. Take a light coat of the paint and carefully go over the whole mirror. I say carefully because sometimes the stickers will start to pop up a little. If paint gets underneath them, no worries, that is the next step! 


3.  Let the paint dry a little but not completely. Start to slowly peel the stickers off. Here is where the q-tips come into play. If there is extra paint where you took the stickers off, then use the q-tip and a little water to remove it. I also used a small paint brush to fix the small areas and edges. 




4. Let your sign dry completely and then spray with the clear coat spray paint. This will keep the paint from scratching off too much. If the paint does scratch off some, just take a little paint brush and touch it up! 

5. Ta-Da! Here is the finished product! Yes, I free-handed the sun, that is why it looks very uneven! ;)


To hang these, you can use little brackets that are made for mirrors like this (just go to any hardware store) or you can use twin like I did on the one in my foyer. For the twin I just used a good amount of hot glue and it worked great!

Home Renovations Day 2


I am so excited to say that the door and window project is almost complete! Last night the tile guy came and retiled the step where the door frame had been! It looks so nice and feels so much more open! Now all that is left is finishing the drywall and to repaint! 








Of course while all of this was going on, I could not go without completing my own project! For the longest time I have wanted to have my own garden! So before all the rain came in, I built a simple garden box and started growing different veggies! Carrots, hot peppers, sweet peppers, two different kind of peas, garlic and even lettuce! I can't wait to see how it all does! Next I will be making another small box for a simple herb garden!  More pictures to come!

Home Renovations Day 1

Before 
Today was Day 1 of my mini- home renovation! I am removing a door frame and window frame and making it more open! I have been anxiously waiting to do this ever since I moved in and finally the day is here! Today my contractor ripped out the door frame and window frame!  It already looks so much better to me. On Friday the plan is for him to come put all the trim up and finish the new window sill! Hopefully early next week the tile will be done and then it is on to repainting!  I will try to share pictures as everything takes place!

Craft Desk Made Easy

Finally I have some time to write a post!!

Many of you have asked me where I got the craft desk for my craft room. Well, I actually made it and it was so simple! So for everyone who has asked here you go!


I looked up and down, left and right for a craft desk/organizer for all my craft things. Most of the ones that I found were either expensive or were going to be after you put all the parts together. I got to thinking, what if I made my own desk with organization. So I started to look for ideas all over the internet, but nothing really caught my eye. Then one night, probably after a mojito, I came up with the plan for my desk, by using two bookcases and a wood plank. I thought that the bookcases would give me enough space for bins or whatever to organize my things and then I would have to top to actually do my work.

Without further to do, here are my directions for making your own craft desk!





Simple DIY Craft Desk


What you'll need:


  • 2 bookshelves, in whatever color you choose ( I found mine at Target for pretty cheap)
  • 1 wood plank (I used a 2' x 4' size from Lowes)
  • Paint or stain 
  • Screws and drill


Directions:

1. If needed put together the bookshelves. Leave them standing straight up and down.

2. Lay the wood plank on top of both shelves to see where you need to drill the holes. This can be kind of tough, but I would recommend not putting the screw right near the edge because then you are going to run the risk of splitting the wood.

3. Once you have figured out where the holes need to be, drill the holes through the wood plank. The drill bit size will depend on how big of screws you use. Unfortunately I did not write down the size of screw or bit I used, so I can't tell you what I used.

4.  Paint the wood plank whatever color you wish. I used white because I am going with a navy, coral and white theme in that room.

5. Lastly, assemble your desk in the room (makes it easier than trying to move it). Screw the screws in through the holes that you pre-drilled to attach the wood plank to the top of the bookshelves.

6. Enjoy your newly, home-made craft desk!

I am so sorry that I have not posted anything recently! It has been a crazy couple of weeks! My parents are having to rip out their entire kitchen due to mold, so I am trying to help my mom keep her sanity! Then I am going to be having some renovations done on my house at the same time! I just tore up my closet and redid it, so pictures of that will be coming soon! Today I am repainting my craft room, which I am super excited about!! Bye Bye white walls!! And yesterday I planted more plants and took out some more trees!

A Chili Kind of Night

Living in Florida, we don't really see a true winter, but I have been watching all my friends post pictures of the snow and it makes me thankful that I am not in that. The past couple of days it has been really cool and rainy. When I woke up this morning and saw that it was gloomy out, I decided it was time to put some homemade chili in the crockpot.  It is the perfect comfort meal when it is cold out and you want to curl up on the sofa with a movie on!

My mom has her own amazing recipe, but I have never developed my own recipe. So this  morning I made my own! Tonight I enjoyed it with some fold-over peanut butter sandwiches ( a chili tradition in our family).  Now, my chili does have a little kick to it, but I kind of like it that way. It was very simple to put all the ingredients in the crockpot and let it cook on low for about 6 hours. My mom has always taught me to, "Make things my own!" If there are ingredients in the chili recipe that you may not like, take them out and find replacements that you like. If there is something that you think would make your taste better, add it! Make it your own!

Kym's Simple Chili Recipe

Ingredients:

1 lb lean ground beef
1 onion, chopped
2 cloves garlic, chopped
2 cans tomato soup
1 can diced tomatoes
1 tsp balsamic vineger
salt
pepper
All spices add to taste:
- garlic powder
- chili powder
- cinnamon
- oregano
- paprika


Directions:

1. Heat onions and garlic with a small amount of olive oil in a pan until translucent.

2. Add ground beef and cook until brown. If needed drain excess grease.  

**While the meat is browning, you can go ahead and heat your crockpot on high.** 

3. Add tomato soup, diced tomatoes, balsamic vinegar to crock pot. Stir.

4. Add in ground beef and onions. Stir until well mixed together. 

5. Add all of he spices and stir well.

6. Cover and cook on low for about 6 hours. 

7. Enjoy!

Simple No-Sew Curtain

              After I moved into my house, I had to make  a list of everything that I wanted to decorate or change. Trust me when I say that the list was very long,  not because there was a lot that needed to be done, but mostly because I just wanted to make it “my home.”
             
               There were a few windows that could use some cute little curtains.  I am not the best person with a sewing machine (clearly my mom’s talent with one skipped me), so I wanted to find an easy way to make window treatments.  Naturally my favorite place to find any ideas for my house was Pinterest, so I ventured there.  It was amazing how many ideas I found, but the best one was a no-sew curtain. No-Sew?!?! That would be awesome!

                I started with a small curtain in my bathroom, just to see if it would work.  Sure enough, it was so easy! Literally the hardest part of the whole curtain was deciding how much of a border I wanted.   If you want  to try a simple curtain, I would highly suggest trying these. I would try a small one to start with and then move to something bigger. After I made the one for my bathroom, I went on to make another small one for my craft room as well as a full size curtain. All No-Sew!!

What you will need:


  • Material of choice; add at least 4” to your amount of material needed
  • No-Sew Fabric Glue
  • Curtain rod of choice
  • Iron


How to make it:


  1. Take your material and lay it on a flat surface, decorative side down. If needed, you can iron the material out.
  2. Start with one of the sides first. Fold over the edge of the material, about 1”. I used an iron to make a crease to help the fold stay.
  3. Use a small amount of the fabric glue to glue down your fold. This will create a small “border” or even edge. Do the same thing with the other side.
    • Make sure that you are gluing the border on the “non-decorative” side.
    • Now with the curtain that I did for my bathroom, I used tension rods, to create a small roman shade.  So for the bottom I created a 2” border, in order for me to slide the rod through.  If you are going to just do a plain, straight hanging curtain, then you can just create a small 1” border.
  4. For the top, create a 2-3” border, depending on how big your curtain rod is. Do the same thing as you did with the sides, and glue them, except don’t forget to leave a space for the rod to go through! I almost made that mistake the first time, and glued the whole thing down!
  5. Let the glue dry for a about 30 minutes before you try to hang you new curtain! And Ta-Da! You have created a simple, no-sew curtain!
